As a certified pastry chef, my journey into lactose-free baking has been deeply personal and transformative. Growing up, I often felt excluded during social gatherings, unable to enjoy the same treats as everyone else due to lactose intolerance.

This challenge evolved into a passion for dairy-free baking, where I immersed myself in understanding the science, experimenting with ingredients, and developing recipes that maintain
the flavor and texture of classic desserts. Today, I’m proud to craft delicious
dairy-free bakes that bring joy to others with similar dietary restrictions.

Early Struggles with Lactose Intolerance

In my South Indian household, lactose intolerance was largely unheard of. My discomfort after consuming dairy was brushed off as fussiness.
Though I enjoyed some ice creams and curds, specialty cakes were often absent from my plate. Traveling and learning about food helped me realize the root of my symptoms, sparking my curiosity to explore dairy-free baking.
